Did you know; Eggs continue cooking even after being removed from the fire? Serve them while they’re still soft, they’ll solidify on the plate!

Healthy Loaded Veggie Scrambled Eggs

  • 2 eggs
  • 1 tbsp Milk
  • Pinch of salt
  • Pepper to taste
  • 1/2 (half) maggi cube (optional)
  • 1 tsp dried parsley
  • 1 tbsp olive oil
  • 1 cup chopped pinach
  • 1/2 (half) cup chopped mushrooms
  • 1/4 cup chopped red bell pepper
  • 2 tbsp grated cheddar cheese



In a bowl, beat the eggs, milk, salt and pepper until combined and set aside


Heat the olive oil in a non-stick pan on medium heat


Add the mushrooms and crumbled maggi cube and fry until soft


Add the spinach and red bell pepper and fry for a further 2 minutes


Pour in the eggs and gently fold everything together until eggs are almost solid and transfer to a plate


Sprinkle on the cheese and serve with some wholemeal toast or a salad
